Baked Sweet Potatoes

Baked sweet potatoes are an incredibly nutritious side dish or even snack, full of fiber and great for regulating your blood sugar. Even better, they act like a vessel for the other tasty, healthy ingredients you want to add in! You can top them with herbs, chutneys, veggies, nut creams, yogurt… so many variations to explore. When you’re not overly hungry but don’t want to skip a meal, try reaching for a sweet potato – it’s easy to prepare and always makes a filling snack. Simply bake 4 at a time and store the leftovers in an airtight container – they’ll reheat quickly when you want something satisfying in an instant!

Baked Sweet Potatoes

Serves: 4

Prep Time: 10 minutes

Cook Time: 45-60 minutes

Ingredients

  • 4 orange fleshed sweet potatoes
  • 4 tsp olive oil or coconut oil

Directions

  1. Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Scrub the sweet potatoes well and dry them off with a clean towel. Brush the skin of each potato with one tsp of oil. Pierce each potato several times with a fork.
  3. Place the potatoes on the prepared pan and bake for 45 minutes to one hour or until tender.
  4. Make a slit in the top of each sweet potato and add a tbsp of your favorite topping.
