Avocado Toast with Hummus

This snack has four simple ingredients but is packed with fiber, protein, and healthy fat. Hummus contains iron, which can help fight anemia, while tomatoes provide vitamin C, which helps in the absorption of iron. If you have mouth sores, leave out the tomato. To boost calories, add a drizzle of olive oil to the toast before adding the hummus. Store-bought or homemade, you can’t go wrong with the hummus you choose for this recipe.

Avocado Toast with Hummus

  • ¼ cup hummus
  • 2 slices whole grain or gluten free bread, toasted
  • 1 avocado, pitted, peeled, and sliced
  • 1 ripe medium tomato, sliced, or 6 cherry tomatoes, halved


Spread half the hummus on each piece of toast. Top with the avocado and tomato slices, divided evenly. Serve.
